The purpose of the product safety rationale (PSR) is to highlight and summarise, on the audit report, the characteristics of the product and production processes that make the final product microbiologically safe and of the appropriate quality for consumption or its intended use throughout its shelf life.
The PSR is not an alternative or replacement for the HACCP approach (which should consider all the known hazards), but is likely to be complementary or extracted from the HACCP work. The PSR is a summary of the key characteristics. It therefore would not normally include:
• every detail of the production process
• information on the ingredients
• generic process controls
This guideline provides clarity on the format and type of information that would be expected in the PSR.
